Tomato Risotto

Large quantity, you may want to halve it.

Ingredients

  • 500g risotto rice
  • 4 onions
  • 1 1/2 cloves of garlic (optional)
  • 4 tbsp olive oil
  • 500g crushed tomatoes
  • 1.5L vegetable broth
  • Salt and pepper
  • Mozzarella (optional)
  • Parmesan (optional)

Instructions

  1. Finely chop garlic and onions and fry in a sufficiently large pot with the olive oil until golden brown.
  2. Add the rice and sauté while stirring until translucent.
  3. Then add the crushed tomatoes and vegetable broth and let the risotto cook in a covered pot on low to medium heat.

Optionally fold in the Parmesan and arrange with mozzarella strips.
