Tomato Risotto
Large quantity, you may want to halve it.
Ingredients
- 500g risotto rice
- 4 onions
- 1 1/2 cloves of garlic (optional)
- 4 tbsp olive oil
- 500g crushed tomatoes
- 1.5L vegetable broth
- Salt and pepper
- Mozzarella (optional)
- Parmesan (optional)
Instructions
- Finely chop garlic and onions and fry in a sufficiently large pot with the olive oil until golden brown.
- Add the rice and sauté while stirring until translucent.
- Then add the crushed tomatoes and vegetable broth and let the risotto cook in a covered pot on low to medium heat.
Optionally fold in the Parmesan and arrange with mozzarella strips.
