Spring Salad

This makes a medium-sized bowl.

Ingredients

  • 100g lamb’s lettuce
  • 2 oranges
  • 2 shallots
  • 2 tbsp red wine
  • 2 tbsp pine nuts
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • Salt
  • Pepper

Instructions

  1. Wash the lamb’s lettuce and place in a large bowl.
  2. Toast the pine nuts in a pan on low to medium heat until lightly browned.
  3. Peel the shallots and cut into fine cubes.
  4. Peel the oranges, remove white membranes and cut into finger-width pieces.
  5. Mix red wine, maple syrup, olive oil, salt and pepper into a dressing.
  6. Add shallots and oranges to the lamb’s lettuce and fold in the dressing.
