Spring Salad
This makes a medium-sized bowl.
Ingredients
- 100g lamb’s lettuce
- 2 oranges
- 2 shallots
- 2 tbsp red wine
- 2 tbsp pine nuts
- 2 tbsp maple syrup
- 2 tbsp olive oil
- Salt
- Pepper
Instructions
- Wash the lamb’s lettuce and place in a large bowl.
- Toast the pine nuts in a pan on low to medium heat until lightly browned.
- Peel the shallots and cut into fine cubes.
- Peel the oranges, remove white membranes and cut into finger-width pieces.
- Mix red wine, maple syrup, olive oil, salt and pepper into a dressing.
- Add shallots and oranges to the lamb’s lettuce and fold in the dressing.
