Ritter Sport Cake

This makes enough for a 24cm springform pan.

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1/4 cup sunflower oil
  • 1/2 packet baking powder
  • 1 cup flour
  • 1/2 cup mineral water
  • Baking paper
  • 2 containers cream
  • 2 containers sour cream
  • 2 cans mandarins
  • 100g drink powder (typically orange flavor)
  • 1 bar Ritter Sport chocolate (typically a yogurt variety)

Preparing the Base

  1. Beat the eggs, sugar and oil until fluffy in a bowl.
  2. Stir the baking powder, flour and mineral water into the fluffy mixture (the batter is liquid).
  3. Line the bottom of a 24cm springform pan with baking paper and spread the batter evenly on it.
  4. Bake the base at 180°C convection for about 15-20 minutes until golden brown. Test with a fork to see if the base is baked through.

Preparing the Filling

  1. Whip the cream while adding the drink powder, creating a homogeneous mixture.
  2. Spread the sour cream on the cake base and distribute evenly.
  3. Drain the mandarins and distribute evenly on the sour cream.
  4. Spread the whipped cream evenly on the mandarins.
  5. Grate the Ritter Sport chocolate and distribute evenly on the cream.
