Ritter Sport Cake
This makes enough for a 24cm springform pan.
Ingredients
- 2 eggs
- 1 cup sugar
- 1/4 cup sunflower oil
- 1/2 packet baking powder
- 1 cup flour
- 1/2 cup mineral water
- Baking paper
- 2 containers cream
- 2 containers sour cream
- 2 cans mandarins
- 100g drink powder (typically orange flavor)
- 1 bar Ritter Sport chocolate (typically a yogurt variety)
Preparing the Base
- Beat the eggs, sugar and oil until fluffy in a bowl.
- Stir the baking powder, flour and mineral water into the fluffy mixture (the batter is liquid).
- Line the bottom of a 24cm springform pan with baking paper and spread the batter evenly on it.
- Bake the base at 180°C convection for about 15-20 minutes until golden brown. Test with a fork to see if the base is baked through.
Preparing the Filling
- Whip the cream while adding the drink powder, creating a homogeneous mixture.
- Spread the sour cream on the cake base and distribute evenly.
- Drain the mandarins and distribute evenly on the sour cream.
- Spread the whipped cream evenly on the mandarins.
- Grate the Ritter Sport chocolate and distribute evenly on the cream.
