Pizza
Ingredients for the Dough

- 800g flour
- 2 packets (14g) dry yeast (1 packet of yeast for flour amounts < 500g)
- 2 tsp salt
- 2 tsp sugar
- 400ml lukewarm water (2 parts flour, 1 part water)
- 24ml olive oil (3ml per 100g flour)
Ingredients for the Tomato Sauce
- 2 cloves of garlic
- A bunch of fresh basil
- Olive oil
- 400g canned tomatoes
- 400g crushed tomatoes
- Salt
- Pepper
Ingredients for the Topping
- Mozzarella (Buffalo Mozzarella) 5 packages

Preparing the Dough
Stir the sugar and yeast into the lukewarm water. Give the water-yeast mixture some time and then add the olive oil. Take a sufficiently large bowl and combine the flour, salt and water mixture (kneading hooks and mixer). Then knead the dough by hand for another 10 minutes. The dough must now rest for 45 minutes. Cover the bowl with a damp kitchen towel and place in a warm spot.
Preparing the Sauce
Peel the garlic cloves and chop them into fine cubes. Pluck the basil leaves from the stems and chop finely. Heat a small pot on low to medium heat and sauté the garlic in a little olive oil until golden brown. Add the chopped basil as well as the chopped and crushed tomatoes and season the sauce with salt and pepper. Let the sauce simmer for about 20 minutes on low to medium heat and crush the tomatoes with a cooking spoon. Taste and season more if needed.
Preparing the Pizza
If you like, you can freeze some of the dough. Shape the rest of the dough into evenly sized balls. If you don’t freeze any dough, you should get about 5-6 balls. To roll out a pizza, press a dough ball flat and roll it out thin with a rolling pin. Spread the sauce on the dough and top the pizza with your favorite toppings.

Bake the pizza at 250°C
