New Year's Eve Salad
This makes a medium to large bowl.
Ingredients for the Salad
- 200g lamb’s lettuce
- One pomegranate
- 200g walnuts
- 125g shaved Parmesan
- A handful of arugula
Ingredients for the Dressing
- 4 tbsp sweet fruit vinegar (e.g. raspberry vinegar)
- 8 tbsp olive oil
- 1 tbsp medium-hot mustard
- Some salt and pepper
Instructions
- Wash the lamb’s lettuce and spin dry.
- Halve the pomegranate and remove the seeds.
- Add the lamb’s lettuce, pomegranate seeds, walnuts, Parmesan and arugula to a bowl.
- For the dressing, add all ingredients to a small bowl and mix well.
- Fold the dressing evenly into the salad.
