Chicken Stifado

- 400g onions
- 700g chicken breast fillet
- Dried rosemary
- 1-2 tbsp oil
- 1 tbsp tomato paste
- 1L crushed tomatoes
- 250ml vegetable broth
- Salt and pepper
- Rice
- 2 cloves of garlic (optional)
Instructions
- Cut the meat into bite-sized cubes and brown with the oil in a Dutch oven with the lid on.
- Cut the onions into coarse cubes, the garlic into fine cubes, and add to the meat.
- Add the tomato paste and fry briefly.
- Add the crushed tomatoes and vegetable broth and season with salt, pepper and rosemary.
- Let the stifado simmer for 15 to 20 minutes on medium heat.
- Meanwhile, cook the rice.
- Serve the stifado with the rice.
