Chicken Stifado

Ingredients

  • 400g onions
  • 700g chicken breast fillet
  • Dried rosemary
  • 1-2 tbsp oil
  • 1 tbsp tomato paste
  • 1L crushed tomatoes
  • 250ml vegetable broth
  • Salt and pepper
  • Rice
  • 2 cloves of garlic (optional)

Instructions

  1. Cut the meat into bite-sized cubes and brown with the oil in a Dutch oven with the lid on.
  2. Cut the onions into coarse cubes, the garlic into fine cubes, and add to the meat.
  3. Add the tomato paste and fry briefly.
  4. Add the crushed tomatoes and vegetable broth and season with salt, pepper and rosemary.
  5. Let the stifado simmer for 15 to 20 minutes on medium heat.
  6. Meanwhile, cook the rice.
  7. Serve the stifado with the rice.
