Birger's Potato Soup

- 125g coarse ham cubes
- 2 tbsp butter
- One onion
- 2 tbsp wheat flour
- 1L chicken broth
- 240ml whole milk
- One container heavy cream
- 4-5 potatoes (floury)
- 125g cheddar cheese
- Paprika seasoning
- Salt
- Pepper
Instructions
- Fry the ham cubes in butter in a large pot.
- Finely chop the onion, add to the ham cubes and fry briefly.
- Add the flour, stir well, then stir in the whole milk, heavy cream, and chicken broth.
- Cut the potatoes into cubes and add them as well.
- Let the soup simmer until the potatoes are soft (at least 20 minutes).
- Finally, add 100g of the cheddar and season with salt, pepper and paprika.
- Serve with spring onions, the remaining cheddar and sour cream as desired.
