Birger's Potato Soup

Ingredients

  • 125g coarse ham cubes
  • 2 tbsp butter
  • One onion
  • 2 tbsp wheat flour
  • 1L chicken broth
  • 240ml whole milk
  • One container heavy cream
  • 4-5 potatoes (floury)
  • 125g cheddar cheese
  • Paprika seasoning
  • Salt
  • Pepper

Instructions

  1. Fry the ham cubes in butter in a large pot.
  2. Finely chop the onion, add to the ham cubes and fry briefly.
  3. Add the flour, stir well, then stir in the whole milk, heavy cream, and chicken broth.
  4. Cut the potatoes into cubes and add them as well.
  5. Let the soup simmer until the potatoes are soft (at least 20 minutes).
  6. Finally, add 100g of the cheddar and season with salt, pepper and paprika.
  7. Serve with spring onions, the remaining cheddar and sour cream as desired.
